01 / ABOUT THE PLACE

About this place

Rather than surrendering to a fixed tasting course, dining here means looking up at the wooden menu plaques and calling out whichever piece catches your appetite at the moment. Tucked into a Jimbocho side street, Tsuruhachi is a sushi restaurant that stays faithful to okonomi—ordering piece by piece—the original essence of traditional Edomae sushi.

Once seated, it is easy to ease into the meal over an initial otoshi, such as blanched squid tentacles, while asking the chef to assemble a selection of sashimi or small appetizers. Savoring tender steamed preparations with sake or salt, alongside kelp-cured flounder or flatfish paired with sake or beer, turns the anticipation of the nigiri into a satisfying prelude.

Traditional Edomae Toppings Chosen from Wooden Plaques

The centerpiece of the meal is the nigiri, featuring Edomae toppings prepared with meticulous, time-honored technique. Firm kohada seasoned with just the right touch of vinegar, richly simmered clams infused with savory depth, and tender anago that yields gently on the palate are foundational choices well worth ordering here. Thick cuts of marinated lean tuna, kuruma prawn, rich sea urchin, and a satisfying tekka maki tuna roll to close out the meal showcase the counter's practiced craftsmanship.

Facing the Chef's Movements in a Quiet Room

Centered around a six-seat counter, the interior has an unadorned, serene atmosphere where diners can observe the chef’s precise, economical motions at close range. Because seating is so limited, reserving ahead is recommended; in addition to evening dinner service, the shop also opens for lunch on Saturdays. It offers a classic, unhurried sushi experience where you can focus entirely on the flavor of each individual piece.
